Behind The Cutting Board: Tonia Wilson

Tonia Wilson is what some might call a triple threat; she is a certified chef, and sommelier of both wine and beer. She has spent many years working as a chef in Europe and is a regular writer for the LCBO’s Food & Drink magazine. She spends most of her time spreading the love of food, wine and beer through her classes and corporate events. She loves cooking for friends and family, is fluent in Italian and loves Belgian beer, Spanish wine and any food she didn’t cook herself.

If you weren’t working in the culinary industry, what would you be doing? 

Interior designer or photographer.

Any advice for people getting started in your industry? Best advice you’ve ever been given?

For industry beginners; 1. take some business courses along with your culinary 2. try to be unique and focus on your strengths 3. make sure to have a back up plan

Best advice I’ve ever been given; In life; see beauty in the simple things. In the kitchen; let the food do the talking and don’t overthink it.

What is your favourite restaurant, right now?

Mye Japanese Restaurant in Oakville, I’m in the west end. Exquisite Japanese cuisine. When I eat out I want to have something I wouldn’t make at home.

In your opinion, what traits would you say describe the ideal Gentleman?

Someone who puts others at ease, and has a good sense of self.

If you could have dinner with anyone (Alive or Dead), who would it be, and why?

Elton John, I bet he’s got some wild stories and after dessert he could belt out a tune or two.
